Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped until stiff, they trap air and lift the mixture as it bakes, giving a light, puffed texture.
Egg yolks
Add richness and help bind the custard-like base so it sets softly.
Bread
Soaked in hot milk, it thickens the base and gives the ramekins body.
Grated cheese
Adds savoury flavour and fat, and browns slightly in the oven.
Milk
Hydrates the bread and forms the moist base of the mixture.

The step that matters

Folding in the egg whites. Stiff whites hold air that makes the soufflé rise. Overmixing or stirring vigorously knocks that air out, so fold gently with a spatula until just combined.

Swap the mustard

How well each one fits the dish's main ingredients (cheese, milk, egg, butter, bread, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits better
  4. Mustardthe original

Fit is the average pairing score against cheese, milk, egg, butter, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
