Brown Bread

Why it works: Wheat and walnut match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 246 recipes. Both carry 1-hexanal, which smells fruit. The science ↓

Brown Bread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Thicken boiling water with cornmeal to make mush.

  2. Add molasses to the mush and let it cool.

  3. Dissolve yeast in tepid water and add to the mixture.

  4. Mix in enough flour to form a non-sticky dough.

  5. Knead the dough for 20 minutes.

  6. Place in a warm bowl to rise overnight.

Shape and bake

  1. In the morning, shape into 2 loaves and place in greased tins.

  2. Let rise until doubled in size.

  3. Bake in a moderate oven at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wheat flour
Builds the gluten network that gives the loaves structure and chew.
Yeast
Ferments sugars to produce gas that makes the dough rise.
Molasses
Feeds the yeast and adds sweetness, dark color and moisture.
Cornmeal
Thickened into mush, it adds moisture and a tender crumb.

The step that matters

Let rise until doubled in size. Yeast needs time and warmth to produce enough gas for good volume. Underproofed dough bakes up dense, while overproofed dough can collapse.

Swap the walnut

How well each one fits the dish's main ingredients (molasses, wheat, flour):

  1. Almondfits better
  2. Flaxseedfits about as well
  3. Chickpeafits about as well
  4. Walnutthe original

Fit is the average pairing score against molasses, wheat, flour. Candidates are from the same food group and used in at least 100 recipes.
