What each ingredient does

Entire wheat flour
Forms the gluten structure and bulk of the loaf, giving it a sturdy, chewy crumb.
Yeast
Produces gas as it ferments, which makes the dough rise and become airy.
New orleans molasses
Adds sweetness, moisture, and a deep color and flavor to the crust and crumb.
Baking soda
Reacts with the acidic molasses to release gas, adding extra lift and darkening the crumb.
Butter
Adds fat that tenderizes the crumb and contributes richness and moisture.

The step that matters

Stir in the remaining flour until the dough drops from the spoon.. Whole wheat flour absorbs water slowly and bran can cut gluten strands, so the dough must be stiff enough to hold shape but not overworked. Too much flour makes a dense loaf; too little leaves it slack and gummy.
