Ingredients

Directions

  1. Use only the best ingredients for success.

  2. Measure and sift dry ingredients, including baking powder and spices, with the flour.

  3. Break each egg separately to check for freshness, separating whites from yolks if needed.

  4. Soften butter (do not melt) and cream it with sugar in a bowl.

  5. Add yolks or whole eggs beaten until light, then mix in the liquid and sifted flour.

  6. If using egg whites, fold them into the batter just before baking.

  7. Beat the batter thoroughly to incorporate air, bringing it up from the bottom with each stroke.

  8. Grease the pans with melted butter and line the bottoms with thin paper.

  9. Fill the pans, ensuring the batter reaches the corners for a flat top after baking.
