Cream Puffs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the choux dough

  1. In a saucepan, bring 1 cup of hot water and ½ cup of butter to a boil.

  2. Stir in 1 cup of flour and beat until smooth.

  3. Let the mixture cool, then add 3 large eggs one at a time, stirring after each addition.

  4. Drop spoonfuls of the mixture onto a greased baking pan.

  5. Bake at 400°F (200°C) for 20 to 25 minutes.

Make the filling

  1. For the filling, beat 2 large eggs, 1 cup of sugar, and ½ cup of flour together.

  2. Add 1 quart of hot milk and cook until thickened.

  3. Flavor the filling as desired and let it cool.

Fill and serve

  1. Cut the baked puffs and fill them with the cream filling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure and richness as they set the puffed dough and bind the filling.
Butter
Adds fat and richness to the dough, helping it stay tender.
All-purpose flour
Provides the starch that sets the dough and thickens the custard filling.
Sugar
Sweetens the filling and helps it feel smooth and rich.
Hot milk
Forms the liquid base of the filling, which thickens as it cooks.

The step that matters

Let the mixture cool before adding the eggs. If the dough is still very hot, the eggs can scramble instead of blending in smoothly, and the dough may not puff well in the oven.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, flour, egg, sugar, milk):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against butter, flour, egg, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
