Caramel Ice Cream with Almonds

Ingredients

Directions

  1. In a double boiler, heat the milk until it comes to a boil.

  2. In a bowl, beat together the sugar, flour, salt, and eggs, then stir this mixture into the boiling milk.

  3. Cook for 20 minutes, stirring most of the time.

  4. About 15 minutes into cooking, caramelize the second cup of sugar in an iron or granite saucepan until it melts and browns.

  5. Quickly pour the hot caramel into the custard and mix thoroughly.

  6. Remove from heat and let cool, then strain.

  7. Add the cream and flavoring, then freeze the mixture.
