What each ingredient does

Tomatoes
Provide the main body, moisture and bulk of the sauce.
Brown sugar
Adds sweetness and helps balance the acidity of the tomatoes and vinegar.
Vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Onions
Add savory depth and body to the cooked tomato mixture.

The step that matters

Rubbing the mixture through a sieve. Pressing the cooked solids through a sieve removes skins and seeds, giving the ketchup a smooth, even texture. Skipping or rushing this leaves a coarse, uneven sauce.
