What each ingredient does

Beef
Provides the main protein and, as it simmers, releases juices that flavour the broth.
Pearl barley
Softens as it simmers, thickening the soup and adding a chewy texture.
Onion
Adds savoury, aromatic sweetness to the broth as it cooks.

The step that matters

Boil the beef slowly for 3 hours. A slow simmer lets collagen and juices release gradually from the meat. A hard boil toughens the meat and can make the broth cloudy and greasy.
