Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Roast Quarter of Lamb
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Trim the joint of the lamb.
Skewer slices of bacon to the outside of the lamb.
Spread the inner side with butter.
Cover with fine bread crumbs seasoned with salt, pepper, and minced parsley.
Roast and serve
Bake in a moderate oven at 350°F (175°C).
When nearly done, remove the bacon and cover with more bread crumbs.
Bake until the lamb is nicely browned.
Serve with sauce or lemon juice, as preferred.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lamb
- Forms the main body of the dish and provides the meat that cooks through during roasting.
- Bacon
- Bastes the lamb with its rendering fat and adds savory flavor as it cooks.
- Butter
- Adds fat that promotes browning and carries flavor into the meat.
- Fine bread crumbs
- Form a seasoned crust that helps hold moisture in and browns in the oven.
The step that matters
Removing the bacon and re-covering with crumbs when nearly done. Timing this late in the roast lets the bacon's fat has already flavored the meat while the new crumb layer can brown without burning. Doing it too early can dry the crust, and too late leaves the top pale.
