What each ingredient does

Spinach
Forms the main body of the dish, softening as it boils and wilts into a tender mass.
Butter
Adds fat and richness, coating the chopped spinach and giving it a smooth mouthfeel.
Hard boiled eggs
Add protein and a mild, creamy contrast to the soft, earthy spinach.

The step that matters

Washing the spinach thoroughly. Spinach leaves trap sand and grit in their folds, so soaking and rinsing in several changes of water removes it. Grit left behind is unpleasant and hard to notice until eaten.
