Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Grated corn
Provides the main body and sweet corn flavour of the fritters.
Egg yolks
Add richness and help bind the batter together.
All-purpose flour
Gives the batter structure so the fritters hold their shape while frying.
Egg whites
Whipped to stiff peaks, they make the batter light and airy.

The step that matters

Folding in the egg whites. Whipped whites trap air that gives lift. Stirring them in vigorously knocks that air out, leaving dense fritters, so fold gently and stop once no white streaks remain.
