Chocolate Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter.

  3. Add the sweet milk and beaten eggs, mixing well.

  4. Gradually add the flour and baking powder, stirring until smooth.

  5. Pour the batter into a greased cake pan and bake until a toothpick comes out clean.

Make the filling

  1. For the filling, combine cold water, chocolate, butter, and sugar in a saucepan.

  2. Cook over medium heat for 30 minutes, stirring occasionally.

  3. Let the filling cool, then spread it between the layers of the cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets in the oven.
Flour
Forms the main structure of the cake crumb.
Baking powder
Releases gas in the batter so the cake rises and becomes light.
Butter
Adds fat for tenderness and richness in the cake and filling.
Sugar
Sweetens the cake and helps it brown and stay moist.

The step that matters

Let the filling cool, then spread it between the layers of the cake.. The filling thickens as it cools, so spreading it while hot can make it runny and cause it to slide off the layers. Cooling the cake layers first also keeps the filling from melting into them.
