Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and richness, helping the stiff dough hold its shape while frying.
Butter
Adds fat, which tenderizes the dough and gives a richer mouthfeel.
Sugar
Adds sweetness and helps the exterior brown to a golden color when fried.
Sweet milk
Supplies moisture that hydrates the flour and binds the dough together.

The step that matters

Frying in very hot lard. If the lard is not hot enough, the crullers absorb excess fat and turn greasy. If it is too hot, the outside browns before the dough cooks through, leaving the centre raw.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, milk, butter, egg, flour):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against sugar, milk, butter, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
