Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the bulk of the candy's structure as it cooks.
Cream
Adds fat and moisture, giving the taffy a softer, richer texture.
Gum arabic
Acts as a stabilizer that helps keep the cooked mixture smooth and prevents crystallization.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, vanilla, cream):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, vanilla, cream. Candidates are from the same food group and used in at least 100 recipes.
