Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Measure and sift the flour with baking powder and spices, if using.

  3. Break each egg separately to check freshness, separating whites from yolks if needed.

  4. In a bowl, cream together softened butter and sugar until creamy.

  5. Add the yolks or whole eggs, beaten until light, along with the liquid and flour mixture.

  6. If using egg whites, fold them into the batter just before baking.

  7. Beat the batter thoroughly to incorporate air, bringing it up from the bottom with each stroke.

  8. Grease the pans with melted butter and line the bottoms with thin paper.

  9. Fill the pans, ensuring the batter reaches the corners for an even top.

  10. Bake until done, avoiding sudden temperature changes.
