Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together.

  2. Add the beaten egg.

  3. Sift the flour and baking powder together twice.

  4. Add the flour mixture alternately with the milk.

Bake

  1. Grease muffin tins well and heat them.

  2. Fill the tins ¾ full and bake at 400°F (200°C) for 30 minutes or until brown and shrunken from the pans.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and tenderness, and helps the muffins brown.
Sugar
Adds sweetness and helps the muffins brown.
Egg
Binds the batter and adds structure as it sets.
Flour
Forms the structure that holds the muffins together as they bake.
Baking powder
Releases gas in the batter so the muffins rise.
Milk
Adds moisture and hydrates the flour to form the batter.

The step that matters

Add the flour mixture alternately with the milk.. Adding flour and liquid in alternating portions keeps the batter smooth and prevents lumps. Overmixing once flour is in develops gluten, which can make muffins tough.
