Roast Turkey

Ingredients

Directions

Prepare the turkey

  1. Stuff and truss the turkey.

  2. Plunge the turkey into boiling water and let it stand for five minutes to plump.

  3. Place the turkey in a steamer and steam for two hours.

  4. Transfer the turkey to a dripping pan and roast as you would a regular roast turkey.

Make the stuffing

  1. For the stuffing, cook the chestnuts in boiling salted water until soft, then drain and force through a potato ricer.

  2. Mix the riced chestnuts with cracker crumbs, moisten with cream, and season with salt and poultry seasoning.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main body of the dish and carries the flavour of the stuffing and seasoning.
Chestnuts
Provide starchy body and a soft, mealy texture to the stuffing once riced.
Cracker crumbs
Absorb the cream and give the stuffing structure and bulk.
Cream
Adds moisture and richness, keeping the stuffing soft and tender.

The step that matters

Steaming before roasting. Steaming the turkey for two hours before roasting changes how the bird cooks and browns, so the roasting stage must be watched closely to finish the skin and reach a safe internal temperature.
