Salmon Timbales

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove salmon from can, rinse thoroughly with hot water, and separate into small flakes.

  2. Soak bread crumbs in milk for 15 minutes, then cook over hot water, stirring to form a smooth paste.

  3. Add salt, cayenne, and salmon to the paste.

  4. Cut and fold in the beaten egg whites until stiff.

  5. Turn the mixture into a slightly buttered mold set in a pan of hot water.

  6. Cover with buttered paper and bake at 350°F (175°C) for about 50 minutes until firm.

  7. Serve with French Hollandaise Sauce.
