Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbread
Forms the main body of the dish, becoming tender after parboiling and browning in butter.
Flour
Dry coating that helps the sweetbread brown evenly in the butter.
White stock
Reduces to a concentrated glaze that adds savoury flavour and gloss.
Butter
Carries heat for browning the sweetbread and enriches the beans with fat and flavour.

The step that matters

Sauté in butter until delicately browned. Flour-dredged meat browns through the Maillard reaction, which needs a hot pan and dry surface. Too little heat or too much moisture leaves it pale and steamed rather than golden.

Swap the beans

How well each one fits the dish's main ingredients (flour, butter):

  1. Almondfits better
  2. Macadamia nutfits better
  3. Cashew nutfits better
  4. Beansthe original

Fit is the average pairing score against flour, butter. Candidates are from the same food group and used in at least 100 recipes.
