Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped to stiffness, it forms the airy, rich body of the charlotte.
Egg whites
Beaten to stiff peaks, they add lightness and volume to the mixture.
Gelatin
Sets the mixture so the layers hold their shape when frozen.
Sugar
Adds sweetness and helps stabilise the whipped foam.

The step that matters

Dissolve the gelatin in hot water before adding it. Gelatin must be fully dissolved to set evenly. Lumps or undissolved granules leave gritty or weak spots in the frozen layers.

Swap the pistachio

How well each one fits the dish's main ingredients (cream, sugar, vanilla, egg, gelatin, almond, chocolate):

  1. Pistachiothe original
  2. Hazelnutfits about as well
  3. Chestnutfits about as well
  4. Macadamia nutfits less well

Fit is the average pairing score against cream, sugar, vanilla, egg, gelatin, almond, chocolate. Candidates are from the same food group and used in at least 100 recipes.
