What each ingredient does

Sturgeon
The main protein, which is firmed and seasoned by the marinade before cooking.
Vinegar
Acidity in the marinade that gently firms and flavours the fish surface.
Raw eggs
Beaten egg helps bread crumbs adhere and forms a golden coating; yolks emulsify the sauce.
Melted butter
Adds fat and richness to the marinade and sauce, carrying flavour and moisture.
Bread crumbs
Form a crisp, browned outer crust when fried.

The step that matters

Frying in very hot fat. If the fat is not very hot, the coating absorbs oil and becomes greasy before it sets and browns, and the fish can cook unevenly. A hot fat seals the crumb crust quickly.

Swap the mustard

How well each one fits the dish's main ingredients (sturgeon, vinegar, butter, pepper, lemon, egg, bread):

  1. Capsicumfits better
