Directions

Prepare the base

What each ingredient does

Corn starch
Thickens the broth into a smooth, light sauce as it boils.
Egg
Enriches and thickens the sauce gently when stirred into hot broth.
Butter
Adds richness and a silky mouthfeel to the sauce.
Milk
Adds creaminess and softens the flavour of the thickened sauce.
Pickled raw ham
Contributes savoury, salty depth to the broth.
Lemon juice
Adds acidity that brightens the rich sauce and balances the oysters.

The step that matters

Stirring the egg into the hot broth. If the egg is added straight to hot liquid it can scramble. Beating it first and adding hot broth gradually warms it slowly so it blends in smoothly and thickens the sauce without curdling.

Swap the onion
