Ingredients

Directions

Prepare

  1. Wash the chicken well in two or three waters, adding baking soda to the last wash to sweeten it.

  2. Dry the chicken with a clean cloth.

  3. Fill the crop and body with stuffing.

Roast

  1. Place the chicken in a roasting pan with hot water and butter.

  2. Add salt and pepper.

  3. Baste frequently.

  4. Roast quickly without scorching.

  5. When nearly done, add a large egg-sized piece of butter to the pan and baste with it.

  6. Dredge a little flour over the chicken and baste again.

  7. Finish roasting. Cook for about 30 minutes if the fire is right.

Make the gravy and serve

  1. Stew the giblets in a little water, then strain.

  2. Mix with the drippings from the chicken.

  3. Thicken the gravy with browned flour.

  4. Add chopped giblets.

  5. Serve the chicken with the gravy and cranberry sauce or tart sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole chicken
Provides the meat that is roasted and carved, with the skin browning as it cooks.
Butter
Adds fat and richness, moistening the meat and helping the skin brown.
Flour
Browned flour thickens the drippings into gravy.
Giblets
Simmered and chopped into the gravy, adding savory meaty flavor.
Baking soda
Raises the pH of the wash water, which is said here to sweeten the chicken.

The step that matters

Roast quickly without scorching. High heat browns the skin and sets flavor, but too much heat or too little basting lets the surface burn before the inside cooks through. Frequent basting with pan liquid keeps the skin moist and golden.

Swap the cranberry

How well each one fits the dish's main ingredients (chicken, butter, pepper, flour, liver):

  1. Lemonfits better
  2. Cranberrythe original
  3. Limefits about as well
  4. Coconutfits about as well

Fit is the average pairing score against chicken, butter, pepper, flour, liver. Candidates are from the same food group and used in at least 100 recipes.
