What each ingredient does

Young ducks
Provide the main meat, which becomes tender through slow, moist braising.
Bacon
Adds fat and smoky, savoury flavour to the braising liquid.
White wine
Adds acidity that brightens the braising liquid and gravy.
Turnip
Frying in butter browns its surface, adding caramel flavour before it is simmered until tender.

The step that matters

Cook over gentle heat, basting frequently until done. Gentle heat keeps the braising liquid below a hard boil, so the duck cooks slowly and stays moist instead of toughening. Basting keeps the skin and meat from drying out while they cook.

Swap the onion
