What each ingredient does

Rabbits
Provide the main meat, which becomes tender through slow stewing.
Salt pork
Adds fat and savoury flavour to the stewing liquid and gravy.
Eggs
Beaten eggs enrich and thicken the cream gravy as they set gently with heat.
Cream
Adds richness and body, giving the gravy a smooth, mellow texture.
Flour
Thickens the gravy so it coats the rabbit pieces.
Lemon juice
Adds acidity that brightens the rich, creamy sauce.

The step that matters

Stir the eggs in gradually. Adding beaten eggs to hot liquid too quickly can scramble them. Stirring gradually, and keeping the sauce from boiling hard, lets the eggs thicken it smoothly.

Swap the mace
