Fried Veal Cutlets
Ingredients
Directions
Heat lard or beef drippings in a frying pan until boiling hot.
Season the cutlets with salt and pepper, then dredge them in flour.
Fry the cutlets until browned on both sides, then remove from the pan.
Reserve some grease for gravy, leaving about 1 tablespoon in the pan.
Mix 1 tablespoon of flour into the reserved grease until smooth and brown.
Gradually add 1 cup of cold water, seasoning with salt and pepper.
Bring the gravy to a boil, then return the cutlets to the pan.
Cover and let simmer gently for 15 minutes to soften the meat.
