Veal Patties

Ingredients

Directions

  1. In a pot, combine veal and salt pork. Stew gently for 10-15 minutes.

  2. Season with pepper, coarse sea salt, celery, and yellow top.

  3. In a bowl, mix flour, egg yolk, and milk to form a thin batter. Stir into the stew and bring to a boil.

  4. For the crust, mix flour, butter, and salt. Add cold water to form a dough. Roll out and cut into rounds the size of small sauce plates.

  5. Cut the center of each round halfway through to create a cover.

  6. Place a spoonful of the stew in each crust, cover with the top, and serve.
