Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb
Provides the main meat, which becomes tender through slow, gentle stewing.
Flour
Thickens the cooking liquid into a gravy as its starch swells with heat.
Potatoes
Add starch and body, softening into the stew and slightly thickening the liquid.
Onions
Contribute sweetness and aroma as they soften during the long stew.

The step that matters

Heat the pot gradually and stew gently. Tough cuts of meat need low, slow heat so collagen can break down and the meat becomes tender. Rapid boiling toughens muscle fibres and can leave the meat dry and chewy.

Swap the onion

How well each one fits the dish's main ingredients (lamb, pork, pepper, potato, flour, milk, biscuit):

  1. Asparagusfits better
  2. Spinachfits better
  3. Okrafits better

Fit is the average pairing score against lamb, pork, pepper, potato, flour, milk, biscuit. Candidates are from the same food group and used in at least 100 recipes.
