What each ingredient does

Tart apples
Provide the bulk of the puree, with natural pectin for body and tartness for balance.
Sugar
Adds sweetness and helps preserve the sauce during long simmering.
Vinegar
Adds acidity that balances sweetness and helps keep the ketchup stable.
Onions
Add savory depth and aroma as they soften into the sauce.
Ground cloves
Contribute warm, aromatic spice flavor.

The step that matters

Boil for one hour. A long, steady boil reduces the water and concentrates the flavors, thickening the sauce. Stopping early leaves it thin and less stable for storage.

Swap the onion

How well each one fits the dish's main ingredients (apple, sugar, pepper, clove, mustard, cinnamon, vinegar):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Radishfits better
  4. Onionthe original

Fit is the average pairing score against apple, sugar, pepper, clove, mustard, cinnamon, vinegar. Candidates are from the same food group and used in at least 100 recipes.
