Make the rice base

  1. Boil the rice in the milk for 30 minutes.

  2. Whip in the butter, sugar, and salt into the hot rice.

  3. When slightly cool, add the beaten egg yolks; if too stiff, add a little more milk.

  4. When cold, roll the mixture into small balls.

Coat and fry

  1. Dip the balls in beaten eggs, then roll in cracker or bread crumbs.

  2. Fry in a mixture of butter and lard, turning until both sides are brown.

What each ingredient does

Rice
Forms the bulk of the croquette and, once cooked soft in milk, binds the mixture.
Milk
Cooks the rice until tender and adds moisture that keeps the mixture soft.
Butter
Adds richness and flavour, and helps the croquettes brown when fried.
Eggs
Bind the cooled rice mixture and form the coating that helps crumbs stick.
Sugar
Adds sweetness and contributes to browning during frying.

The step that matters

Let the rice cool fully before rolling. Warm rice is soft and sticky, so the balls can break or lose shape. Cooling firms the starch so the croquettes hold together through coating and frying.
