Saucer Puddings

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat oven to 400°F (200°C).

  2. In a bowl, mix flour and powdered sugar.

  3. In another bowl, beat eggs and add to milk.

  4. Combine egg mixture with flour and sugar mixture and mix well.

Bake

  1. Butter three saucers generously.

  2. Fill saucers halfway with batter.

  3. Bake in preheated oven for about 20 minutes.

  4. Once cool enough, remove puddings from saucers.

Fill and serve

  1. Cut each pudding in half and spread a thin layer of preserve between halves.

  2. Close the puddings and serve with cream.

What each ingredient does

Eggs
Provide structure and richness as they set during baking.
Flour
Gives the batter body so the puddings hold their shape after baking.
Milk
Adds moisture and liquid that turns the batter into a custard-like texture.
Powdered sugar
Adds sweetness and dissolves easily into the batter.
