Directions

Make the syrup

  1. Combine sugar, water, vinegar (or cream of tartar), and glycerine in a saucepan.

  2. Boil without stirring for 20 to 30 minutes, until a drop forms a crisp ball in cold water.

  3. Add baking soda just before pouring onto greased platters.

Shape the candy

  1. Pour the mixture onto the greased platters to cool.

  2. Once partly cool, pour flavoring over the top.

  3. Pull the candy until it turns very white.

  4. Draw the candy into sticks of desired size.

  5. Cut the sticks with shears into sticks or kiss-shaped drops.

  6. Color the candy if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the crystalline candy base that sets into a firm, brittle structure as it cooks.
Vinegar or cream of tartar
Acid that helps prevent sugar from crystallizing, keeping the candy smooth and clear.
Glycerine
Humectant that keeps the candy from becoming overly brittle or sticky.
Baking soda
Reacts with the hot syrup to add tiny bubbles, lightening the texture as the candy is pulled.

The step that matters

Boil without stirring to the hard-ball stage. Stirring can trigger sugar crystals that make the candy grainy. Boiling until a drop forms a crisp ball in cold water ensures the right concentration of sugar for a firm set.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Pineapplefits about as well
  4. Apricotfits about as well

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
