Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Stew the chicken until tender, then season and thicken the gravy.

  2. Remove the largest bones and scrape the meat from the neck and backbone.

Assemble the pie

  1. Line a 4 or 6 quart pudding dish with biscuit dough, ½ inch thick.

  2. Layer part of the chicken in the dish, add butter, salt, pepper, and sliced boiled eggs.

  3. Add the remaining chicken and season again; optionally include new potatoes.

  4. Pour enough gravy over the mixture to fill the dish.

  5. Cover with a crust, making a hole in the center the size of a teacup.

Bake and serve

  1. Brush the top with beaten egg white and bake at 400°F (200°C) for 30 to 45 minutes.

  2. Garnish with small celery leaves arranged in a circle.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat, which becomes tender through slow stewing in liquid.
Boiled eggs
Add richness and a firm, sliced texture inside the filling.
Biscuit dough
Forms a sturdy crust that bakes to a golden, flaky top and holds the filling.
Egg white
Brushed on top, it helps the crust brown and gives a glossy finish.
Butter
Adds fat and richness to the filling as it seasons the chicken.

The step that matters

Brush the top with beaten egg white and bake. Egg white promotes even browning and a glossy crust. The hole in the crust lets steam escape so the filling does not push the dough apart or turn the crust soggy.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, butter, pepper, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, butter, pepper, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
