What each ingredient does

Beef heart
Provides the main meat, which becomes tender through long, slow stewing.
Brown flour
Thickens the stew liquid when mixed into a paste and stirred in.
Butter
Adds richness and fat, giving the stew a rounder mouthfeel.
Celery
Contributes aromatic flavour and a little body as it softens in the stew.

The step that matters

Stewing until very tender. Heart is dense, muscular meat rich in connective tissue. Slow, gentle simmering over a long time breaks that collagen down into gelatin, making the meat tender. Rushing this step or boiling hard leaves it tough.

Swap the onion

How well each one fits the dish's main ingredients (beef, parsley, celery, pepper, butter, flour):

Fit is the average pairing score against beef, parsley, celery, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
