Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Baked Mutton Chops and Potatoes

Oven, in the book's wordsA very hot oven

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and peel the potatoes, then slice them into ¼‑inch thick rounds.

  2. Rinse the potato slices in cold water to clean them thoroughly.

  3. Trim excess fat from the mutton chops and shape them with a skewer.

Layer and bake the potatoes

  1. Layer the potato slices in a baking dish, sprinkling salt and pepper between each layer.

  2. Add enough cold water to the dish to prevent burning.

  3. Bake in a preheated oven at 400 °F (200 °C) on the top shelf until browned, about 10 minutes.

Bake the chops

  1. Once the potatoes are browned, place the chops on top, adding more salt and pepper.

  2. Move the dish to a cooler part of the oven and bake for about 45 minutes until the chops are cooked through.

  3. Turn the chops to brown the other side, adding hot water if the potatoes look dry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the base layer, absorbing seasoning and softening while browning on top.
Mutton loin chops
Provide the main protein, cooking through slowly in the oven while their fat renders and browns.
Cold water
Keeps the dish moist and prevents the potatoes from scorching early in the bake.

The step that matters

Moving the chops to a cooler part of the oven. Mutton chops need a long, gentler bake to cook through; if left at the initial high heat the outside can over-brown or dry out before the centre is done.

Swap the potato

How well each one fits the dish's main ingredients (pepper, mutton):

  1. Capsicumfits better
  2. Carrotfits better
  3. Tomatofits about as well
  4. Potatothe original

Fit is the average pairing score against pepper, mutton. Candidates are from the same food group and used in at least 100 recipes.
