What each ingredient does

Green tomatoes
Provide the bulk and tart base that the sauce is built on.
Onions
Add savory sweetness and body as they soften during the long boil.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar and tomatoes.
Vinegar
Provides acidity that preserves the sauce and gives it its tang.
Mustard seed
Contributes sharp, pungent flavor that deepens during cooking.

The step that matters

Boil for 2 hours in the preserving pan. A long, gentle boil lets the tomatoes and onions break down and the vinegar and spices meld, thickening the ketchup. Too brisk a boil or too short a time can leave it thin, uneven, or harsh-tasting, and a pan that scorches can taint the flavor.

Swap the onion

How well each one fits the dish's main ingredients (tomato, mustard, allspice, clove, ginger, pepper, celery):

  1. Carrotfits better
  2. Capsicumfits better
  3. Horseradishfits better
  4. Onionthe original

Fit is the average pairing score against tomato, mustard, allspice, clove, ginger, pepper, celery. Candidates are from the same food group and used in at least 100 recipes.
