Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cheese mixture

  1. In a bowl, mix the grated cheese with the egg yolks.

  2. Add the grated bread, butter, mustard, salt, and pepper. Mix well.

Prepare and bake

  1. Toast the slices of bread and remove the crusts.

  2. Cut the toasted bread into shapes and spread the cheese mixture thickly on top.

  3. Place the prepared bread in a 400°F (200°C) oven until hot and slightly browned.

  4. Serve immediately.

What each ingredient does

Dry cheese
Melts into a creamy, savoury sauce that gives the rarebit its main flavour.
Egg yolks
Bind the cheese mixture and help it set into a thick, custard-like topping when heated.
Grated bread
Adds body to the mixture and helps it hold its shape on the toast.
Butter
Adds richness and smoothness, helping the mixture spread and brown.
Made mustard
Adds sharpness that balances the richness of the cheese and egg.

The step that matters

Baking until hot and slightly browned. The topping needs enough heat to warm through and brown lightly, but too much heat can overcook the egg yolks and make the cheese oily or rubbery.
