Sardine Sandwiches

Ingredients

Directions

Prepare the sardines

  1. Drain the oil from the sardines and place them in hot water for a few minutes to remove grease.

  2. Pour away the water and dry the sardines with a cloth.

  3. Scrape off the skins and pound the sardines in a mortar until they form a paste.

Make the filling

  1. Add pepper, salt, and tiny pieces of lettuce to the sardine paste.

Assemble the sandwiches

  1. Spread the mixture on previously cut sandwiches or chop the sardines finely.

  2. If desired, squeeze a few drops of lemon juice into the chopped sardines and spread between buttered bread or cold biscuits.

What each ingredient does

Sardines
Provide the main savoury, oily flavour and the bulk of the filling.
Lettuce
Adds a crisp, fresh texture and a little moisture to the paste.
Lemon juice
Adds acidity that brightens the rich, oily fish flavour.

The step that matters

Pounding the sardines to a paste. Pounding breaks down the fish flesh so the filling spreads evenly. Removing the skins and drying the fish first keeps the paste smooth and stops excess water or oil from making the bread soggy.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (pepper, lettuce, bread):

  1. Avocadofits better
  2. Limefits better
  3. Lemonthe original
  4. Cherryfits about as well

Fit is the average pairing score against pepper, lettuce, bread. Candidates are from the same food group and used in at least 100 recipes.
