Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitterness and aroma, and helps preserve the liquid.
Flour
Provides starch that feeds the fermentation and thickens the starter.
Potatoes
Supply starch and nutrients that feed the wild yeast as it ferments.
Brown sugar
Provides sugar that yeast consumes, driving fermentation and adding flavor.

The step that matters

Letting the mixture stand for three days. Fermentation needs time for wild yeasts and bacteria to establish themselves. Cutting this short leaves the starter weak or unstable, so it may not raise dough well.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, flour):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
