Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into the batter, they trap air that helps the fritters rise and turn light.
Cream
Adds fat and moisture, giving the fritters a rich, tender interior.
Prepared flour
Provides the starch that sets during frying, forming the fritter's structure.

The step that matters

Beat the batter hard until thick. Vigorous beating incorporates air into the egg whites and cream, which gives the batter lift. Under-beaten batter produces dense fritters that may spread and absorb more fat.

Swap the nutmeg

How well each one fits the dish's main ingredients (cream, egg, flour):

  1. Nutmegthe original
  2. Jalapenofits about as well
  3. Capersfits less well
  4. Turmericfits less well

Fit is the average pairing score against cream, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
