Fine Puff Paste

Ingredients

Directions

  1. In a bowl, mix flour, baking powder, and salt; sift again.

  2. Rub lard into the flour until it forms a very fine smooth paste.

  3. Add enough ice water mixed with the beaten egg white to form a stiff dough.

  4. Roll out the dough into a thin sheet and spread with ¼ of the butter.

  5. Sprinkle with a little flour, then roll up tightly like a scroll.

  6. Double the ends towards the center, flatten, and re-roll.

  7. Spread with another ¼ of the butter and repeat until all butter is used.

  8. Place on an earthen dish, cover with a cloth, and refrigerate until cold, at least 1 hour.
