What each ingredient does

Egg yolks
Enrich the milk dip and add richness and a custard-like softness to the bread.
Sweet milk
Soaks into the bread to moisten it and carry the egg into the crumb.
Baker's bread
Absorbs the egg and milk mixture and fries to a crisp golden crust.
Melted butter
Fries the bread, adding fat for browning and a rich, toasty flavor.
Egg whites
Whipped to a froth, they add lightness and airy volume to the sauce.
White sugar
Sweetens the lemon sauce and helps stabilize the whipped egg whites.

The step that matters

Frying the dipped bread in hot butter. If the butter is not hot enough, the soaked bread absorbs fat and turns greasy and soggy instead of browning. Enough heat sets the egg coating so the outside turns golden and crisp while the inside stays soft.
