What each ingredient does
- Raspberries
- Provide the fruit, flavour and natural pectin that gives the jam its body.
- White sugar
- Sweetens the jam and helps it set into a spreadable texture while preserving it.
The step that matters
Stir until the sugar is fully dissolved. Undissolved sugar grains can crystallise in the finished jam and leave a gritty texture, so the mixture should be stirred well before jarring.
