Why it works: Clam and crab share more aroma than cooks usually use. They rank in the top 8% of all ingredient pairs, and cooks put them together in 17 recipes. Both carry 2,3,5-trimethylpyrazine, which smells cocoa, roasted. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Gives the stock its main savoury, briny flavour and body as it breaks down.
Onion
Browning the onion adds sweetness and deeper colour to the stock.
Tomatoes
Add acidity and a fruity note that balances the richness of the fish.
Butter
Carries flavour from the onion and fish and adds richness to the stock.

The step that matters

Cook the onions until well browned. Browning builds deeper, sweeter flavour through caramelisation and Maillard reactions. Pale onions leave the stock tasting flat, while over-darkened onions turn it bitter.
