Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Salt mackerel
- The main fish, which is freshened by soaking and then gently cooked.
- Heavy cream
- Adds richness and a smooth, moist texture to the fish.
- Melted butter
- Adds fat for richness and a silky mouthfeel.
- Milk
- Forms the base of the sauce, giving it body and a mild, creamy flavour.
- Cornstarch
- Thickens the milk into a smooth sauce as it heats.
- Egg
- Enriches the sauce and helps it set smooth and creamy when gently heated.
The step that matters
Gradually pour the sauce over the egg. Adding hot sauce to the egg slowly tempers it, warming the egg gradually so it thickens smoothly instead of scrambling. Keep the heat low and stir constantly.
Swap the parsley
How well each one fits the dish's main ingredients (butter, cream, pepper, milk, egg, lemon):
- Nutmegfits about as well
- Parsleythe original
- Tarragonfits about as well
- Cardamomfits less well
Fit is the average pairing score against butter, cream, pepper, milk, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
