What each ingredient does

Halibut
Forms the main body of the dish as the flaked fish that the sauce is poured over.
Butter and flour
Together they form a roux that thickens the stock into a smooth sauce.
Fish bones and skin (in the method)
Simmered in the water to release flavor into the stock that becomes the sauce.

The step that matters

Thicken the stock with the butter and flour mixture. Flour needs to be cooked in fat and whisked into hot liquid to avoid lumps and a raw starchy taste; the starch then thickens the stock as it heats.

Swap the onion

How well each one fits the dish's main ingredients (pepper, coffee, butter, flour, almond, parsley):

  1. Arrowrootfits better
  2. Shallotfits better
