Steamed Chicken

Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which firms and turns opaque as it steams.
Flour
Thickens the gravy as its starch swells when heated with liquid.
Cream
Adds richness and body to the gravy, softening its flavour.
Gravy
Supplies the savoury liquid base that is thickened into the sauce.

The step that matters

Adding the flour and cream mixture to the gravy. Flour must be mixed smooth with the cream first, otherwise it clumps. The gravy should be boiling so the starch swells and thickens evenly.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (chicken, pepper, flour, cream):

  1. Turmericfits about as well
  2. Garlicfits about as well
  3. Nutmegthe original
  4. Tarragonfits about as well

Fit is the average pairing score against chicken, pepper, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
