Veal Patties

Why it works: Pepper and celery match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

Make the filling

  1. Stew the veal and salt pork gently for 10-15 minutes.

  2. Season with pepper, coarse sea salt, chopped celery, and picked yellow tops.

  3. Stir in a paste made of flour, egg yolk, and enough milk to form a thin batter.

  4. Bring the mixture to a boil.

Assemble and serve

  1. Make small round crusts the size of a small sauce plate.

  2. Cut the center of each crust halfway through to create a cover.

  3. Place a spoonful of the stew in each crust, cover with the top, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat base that becomes tender when gently stewed.
Salt pork
Adds fat and savory flavor to the stew as it renders.
Flour
Thickens the mixture into a thin batter-like body.
Egg yolk
Adds richness and helps bind the thickened mixture.

The step that matters

Bring the mixture to a boil. Once the flour and egg yolk are stirred in, the mixture must be brought to a boil so the flour starch thickens fully and the egg is cooked. Stopping short leaves the filling thin and raw-tasting.

Swap the celery

How well each one fits the dish's main ingredients (veal, pork, pepper, flour, egg, milk):

  1. Nutmegfits better
  2. Sagefits better
  3. Marjoramfits better
  4. Celerythe original

Fit is the average pairing score against veal, pork, pepper, flour, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
