Hashed Mutton

Ingredients

Directions

  1. Season the cold mutton pieces with pepper and salt.

  2. Place the bones and trimmings in a saucepan, cover with water, and add sliced onions.

  3. Stew until a good gravy is formed, then skim and strain it into a stewpan.

  4. Add the mutton to the gravy.

  5. Mix in the boiled carrots, turnips, potatoes, and onions.

  6. Simmer gently until the meat is warmed through, avoiding boiling.

  7. Cover a dish with slices of buttered toast, then layer the meat and vegetables on top.

  8. Pour the gravy over the dish and add tomatoes if desired.

  9. If in season, you can add boiled green peas or Lima beans instead of the other vegetables.
