Pork Cutlets

Ingredients

Directions

  1. Cut pork from the leg and remove the skin. Trim and beat the cutlets, then sprinkle with salt and pepper.

  2. In a pan, prepare 1 beaten egg. On a flat dish, mix bread crumbs, minced onion, and sage.

  3. Heat lard or drippings in a frying pan until boiling. Dip each cutlet in the egg, then coat with the bread crumb mixture.

  4. Fry the cutlets for 20 to 30 minutes, turning them often.

  5. After frying, remove the cutlets and skim the gravy. Dredge in a little flour, boil briefly, and pour around the cutlets on the dish.

  6. Serve with apple sauce.
